Ingredients

For the dough

  • 200 g organic whole wheat flour
  • 15 g of raw honey
  • 1 sachet of vanilla sugar
  • 30 ml olive oil
  • 50 ml of water

For the pastry cream

  • 250 ml almond milk
  • 1 egg
  • 30 g cornstarch
  • 3 tbsp agave syrup
  • 1 tbsp of vanilla extract
  • 300 g fresh or frozen raspberries (previously thawed)
  • Rubbed dark chocolate (Optional)

Instructions

  • Prepare dough: Combine flour, Honey, oil, and water. Knead until dough forms. Adjust consistency if needed. Roll out and line tartlet molds. Chill for 10-15 mins.
  • Prick and bake tart bases at 180°C for 25 mins.
  • Make pastry cream: Heat milk with agave syrup and vanilla. Add egg and cornstarch, stirring until thickened. Let cool with cling film.
  • Pour cooled cream onto tart bases. Top with raspberries.
