Ingredients
- 1 pound French green beans trimmed
- 2 Tsp minced garlic, 2 cloves
- 1 Tbsp grated lemon zest,2 lemons
- 3 Tbsp minced fresh flat-leaf parsley
- 3 Tbsp freshly grated Parmesan cheese
- 2 Tbsp toasted pine nuts
- 2 1/2 Tbsp good olive oil
- Kosher salt and freshly ground black pepper
Instructions
- Boil a large pot of water, then blanch green beans for 2-3 minutes until tender yet crisp.
- Drain and transfer beans to ice water to retain their vibrant green color.
- Prepare gremolata by combining garlic, lemon zest, parsley, Parmesan, and pine nuts in a bowl.
- When ready to serve, heat olive oil in a sauté pan, then add drained and dried beans. Sauté for 2 minutes until heated through.
- Off the heat, add gremolata to the beans, toss well, and sprinkle with salt and pepper before serving hot.
