Peanut Butter Chocolate Protein Bars
Enjoy the delicious taste of these no-bake peanut butter chocolate protein bars, each boasting 9 grams of protein. Plus, they're incredibly easy to whip up.
Ingredients
- 10 pitted medjool dates
- 1/2 cup peanuts
- 1/2 cup egg white protein powder collagen and vegan protein powders work too
- 2 Tbsp cocoa powder
- 1/4 tsp sea salt if peanuts are salted, leave this out
- 1-3 Tbsp of water if needed
- 2 Tbsp dark chocolate chunks or chips
Instructions
- Line a loaf pan with parchment paper.
- In the base of your food processor, combine dates, peanuts, protein powder, cocoa powder, and sea salt. Process until well combined and peanuts are broken down into tiny bits.
- If the mixture is sticking together and forming a ball of dough, that’s great! If not, it may be dry. In this case, add a little water—start with 1 tablespoon, blend, and check if the mixture starts holding together. Add another tablespoon if needed. Typically, 1-3 tablespoons of water should be sufficient.
- Once the mixture holds together, transfer it into the parchment-lined loaf pan. Fold the parchment over the top and press the mixture evenly into the pan.
- After spreading it evenly, add chocolate chunks and press them into the top of the mixture.
- Place the pan in the fridge for about 30 minutes to 1 hour to let the mixture harden.
- Once hardened, remove from the pan and cut into 5 bars.
- Store the bars in the fridge for up to 1 week. Enjoy them cold or at room temperature
