Line a loaf pan with parchment paper.
In the base of your food processor, combine dates, peanuts, protein powder, cocoa powder, and sea salt. Process until well combined and peanuts are broken down into tiny bits.
If the mixture is sticking together and forming a ball of dough, that's great! If not, it may be dry. In this case, add a little water—start with 1 tablespoon, blend, and check if the mixture starts holding together. Add another tablespoon if needed. Typically, 1-3 tablespoons of water should be sufficient.
Once the mixture holds together, transfer it into the parchment-lined loaf pan. Fold the parchment over the top and press the mixture evenly into the pan.
After spreading it evenly, add chocolate chunks and press them into the top of the mixture.
Place the pan in the fridge for about 30 minutes to 1 hour to let the mixture harden.
Once hardened, remove from the pan and cut into 5 bars.
Store the bars in the fridge for up to 1 week. Enjoy them cold or at room temperature
