Ingredients

  • 4 oz pineapple chunks preferably frozen
  • 1 small sprig mint fresh
  • 5 oz low fat Greek yogurt
  • 1/4 tsp vanilla extract
  • 1.5 oz baby spinach
  • 1 tbsp flax seeds
  • 1 tbsp cashews
  • 1.5 tsp maple syrup
  • 2 tbsp rolled oats
  • 1 ice cubes

Instructions

  • Combine the following ingredients in a blender: 4 oz pineapple chunks, 1 small sprig fresh mint, 5 oz low-fat Greek yogurt, ¼ tsp vanilla extract, 1.5 oz baby spinach, 1 tbsp flax seeds, 1 tbsp cashews, 1.5 tsp maple syrup, 2 tbsp rolled oats, and 1 ice cube. Blend until smooth.
  • Blend until the mixture is fully incorporated and reaches a creamy consistency.
  • Ensure that there are no visible textures of solids, aiming for a smooth blend.
  • Taste and, if desired, add additional mint leaves for an extra burst of mint flavor.
