Ingredients

  • 3 1/4 cups Greek yogurt Non-fat or low fat
  • 14 ounces cream cheese
  • 6 large eggs
  • 3/4 cup sugar or sugar substitute
  • 1/2 cup protein powder optional
  • 2/3 cup cornstarch
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

CRUST

  • 2 protein cookies crushed
  • 5 tbsp light butter melted

TOPPING

  • 3 cups strawberries divided
  • 2 tbsp cornstarch or wheat flour
  • 1 cup sugar

Instructions

  • Preheat the oven to 160C/320F and grease a 9-inch pie or springform cake pan.
  • For the crust, crush protein cookies and measure out 1 3/4 cups. Mix with melted butter and press into the pan.
  • In a bowl, beat cream cheese until smooth. Add yogurt, sugar, and vanilla extract. Gradually stir in cornstarch until no clumps remain. Transfer to the crust and bake for 60-70 minutes until edges set.
  • Allow the cheesecake to cool completely.
  • In a food processor, blend 2 cups of strawberries with cornstarch until smooth. Transfer to a saucepan, add sugar, and cook over medium heat for 15 minutes until thick. Remove from heat and add remaining chopped strawberries. Let it cool.
  • Spread the strawberry mixture over the cheesecake and refrigerate until set.
