Protein cheesecake

Ingredients
- 3 1/4 cups Greek yogurt Non-fat or low fat
- 14 ounces cream cheese
- 6 large eggs
- 3/4 cup sugar or sugar substitute
- 1/2 cup protein powder optional
- 2/3 cup cornstarch
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
CRUST
- 2 protein cookies crushed
- 5 tbsp light butter melted
TOPPING
- 3 cups strawberries divided
- 2 tbsp cornstarch or wheat flour
- 1 cup sugar
Instructions
- Preheat the oven to 160C/320F and grease a 9-inch pie or springform cake pan.
- For the crust, crush protein cookies and measure out 1 3/4 cups. Mix with melted butter and press into the pan.
- In a bowl, beat cream cheese until smooth. Add yogurt, sugar, and vanilla extract. Gradually stir in cornstarch until no clumps remain. Transfer to the crust and bake for 60-70 minutes until edges set.
- Allow the cheesecake to cool completely.
- In a food processor, blend 2 cups of strawberries with cornstarch until smooth. Transfer to a saucepan, add sugar, and cook over medium heat for 15 minutes until thick. Remove from heat and add remaining chopped strawberries. Let it cool.
- Spread the strawberry mixture over the cheesecake and refrigerate until set.
