3 1/4cupsGreek yogurt Non-fat or low fat
14ouncescream cheese
6large eggs
3/4cupsugar or sugar substitute
1/2cupprotein powder optional
2/3cupcornstarch
2teaspoonsvanilla extract

CRUST
2protein cookies crushed
5tbsplight butter melted
TOPPING
3cupsstrawberries divided
2tbspcornstarch or wheat flour
1cupsugar
Instructions
Preheat the oven to 160C/320F and grease a 9-inch pie or springform cake pan.
For the crust, crush protein cookies and measure out 1 3/4 cups. Mix with melted butter and press into the pan.
In a bowl, beat cream cheese until smooth. Add yogurt, sugar, and vanilla extract. Gradually stir in cornstarch until no clumps remain. Transfer to the crust and bake for 60-70 minutes until edges set.
Allow the cheesecake to cool completely.
In a food processor, blend 2 cups of strawberries with cornstarch until smooth. Transfer to a saucepan, add sugar, and cook over medium heat for 15 minutes until thick. Remove from heat and add remaining chopped strawberries. Let it cool.
Spread the strawberry mixture over the cheesecake and refrigerate until set.
