1 1/2cupsold fashioned rolled oats
1/2cupalmond flour
1/2cupvanilla protein powder
2Tablespoonschia seeds
1Tablespoonground cinnamon
1/4teaspoonsea salt
1/2cupunsweetened almond milk
1/4cupunsweetened applesauce
1/3cuphoney
2egg whites
2teaspoonsvanilla extract
1/2cupseedless raisins
Coconut butter for drizzling
Instructions
Preheat the oven to 350°F. Grease an 8x8 inch baking dish with coconut oil or line it with parchment paper.
In a large bowl, combine oats, almond flour, protein powder, chia seeds, cinnamon, and salt.
In a medium bowl, whisk together almond milk, applesauce, honey, egg whites, and vanilla.
Pour the wet ingredients into the dry ingredients and stir until well combined. Gently fold in the raisins.
Transfer the mixture into the prepared baking dish, spreading it evenly. Bake for 22-25 minutes until the top starts to brown and a toothpick inserted comes out clean.
Remove from the oven and let it cool for 15-20 minutes in the pan.
Once cool, drizzle coconut butter over the top. Cut into bars, remove from the pan, and store in a container. The bars will keep in the fridge for up to one week.
