Ingredients
1small red onion very finely chopped (about half a cup)
2Tbspchopped cilantro
1-2crushed cloves garlic crushed
1cupof Mayonnaise
1-2Tbsplemon juice to taste
3-6Tbspharissa paste 3 for mild-medium spice up to 6 for hot
1.5Tbsptomato paste
1Tspground cumin
1Tspsugar
Instructions
Finely chop red onion, cilantro, and crush one clove of garlic into a small-medium size glass bowl.
Add mayonnaise, 1 tablespoon lemon juice, 3 tablespoons harissa paste, tomato paste, cumin, and sugar to the bowl.
Whisk well with a fork or balloon whisk until all ingredients are well-incorporated.
Taste and adjust seasoning: add more lemon juice for tang, garlic for extra flavor, and harissa paste for spiciness.
Use immediately or refrigerate for at least an hour to enhance flavors.
