Ingredients
3cupschopped romaine lettuce
1cupsliced cucumber
115 ounce can chickpeas, rinsed
¼cupdiced low-fat Swiss cheese
6cherry tomatoes halved if desired
Dressing
1avocado peeled and pitted
1 ½cupsbuttermilk
¼cupchopped fresh herbs such as tarragon, sorrel, mint, parsley and/or cilantro
2Tbsprice vinegar
½Tspsalt
Instructions
Blend avocado, buttermilk, herbs, vinegar, and salt until smooth.
Toss lettuce and cucumber with 1/4 cup of dressing. Top with chickpeas, cheese, and tomatoes.
